Farfalle

Farfalle are Italian pasta in shape of a butterfly. The plural Farfalle refers to the type of pasta, a single noodle called Farfalla. The word comes from Italian, where it also means butterfly ( e).

Their appearance is derived from a rectangular piece of pasta dough which is pressed together in the middle. In this case, the pasta bulges in the middle, and is somewhat thicker. However, the ends remain thin and so mimic butterfly wings after.

Originally, this pasta places developed in the ancient city of Emilia.

Variants of the Farfalle are: Farfalle Tonde (sideways round), Farfalle Tricolori ( tri-color), Farfalline ( small), Farfalloni (large), Fiocchi Rigati ( without teeth ).

For Farfalle there are regional variations, a large number of names, other names are Fiocchetti and stricchetti, nocchette in the Abruzzi and in Apulia, nocheredde in Calabria, in Piedmont, in the area of Cuneo, sciancon ", in Umbria Fiocchetti.
