Firming agent

Firming agents are food additives that are designed to ensure a higher or longer lasting strength, for example, the pulp of fruits, simultaneously therewith, but pretend freshness.

Are salts, typically lactates or phosphates, salts of calcium or aluminum sulfates.

They are mainly used in ( fresh ) fruits and vegetables. For example, can be sprayed with a solution of the salt with sliced ​​into columns sold fruit pulp. Are salts which react with an ingredient of the product, such as for example the pectin in the fruit.
