Food combining

Food combining is developed by William Howard Hay in the early 20th century form of nutrition, not to be eaten at the same time with a meal at the main protein-rich and carbohydrate-containing foods. It is a diet that is considered by many as a method for weight loss. After the " food combining theory " may generally be eaten almost everything, only a few foods are excluded, such as legumes. There are neither counted nor amounts of calories. The theories of food combining underlying medically but now disproved. In Germany, the food combining was introduced mainly by the physician Heinrich Ludwig WALB ( 1907-1992 ).

A new variation of the principle is the car diet, the fats and carbohydrates separated, combined with elements of low-carb and low-fat. The Munich doctor Olaf Adam has developed it and marketed it as well. The main difference Hayschen food combining is that here carbohydrates and fat are separated. In the daily diet containing carbohydrate recipes are marked with the color green. Yellow stands for fat and orange for snacking. The Montignac Method is based partly on the idea of food combining. The insulin food combining is also inspired by Hays approach, but has the aim to avoid a sharp rise in insulin levels, to promote body fat loss, and should not be confused with Hays food combining.

Theory

Was developed the principle of food combining by William Howard Hay (1866-1940), a New York physician, in 1907. Hay was also known for his radical critique of the principle of vaccination. He assumed that the cause of all diseases of civilization lies in acidosis (acidosis ) of the body that would be caused mainly by the common intake of protein and carbohydrates. Hay postulated that humans can not digest the same time both nutrients. Fermentation processes are the result of the small intestine. Since legumes contain both protein and carbohydrates, they are unfit for human consumption. However, this also applies to a number of other food products, nevertheless allows for the separation food.

The digestive processes should run smoothly at a separation since the enzymes involved so better able to dock with the food, according to Hay. Because the enzyme ptyalin unfolding the full effect of the splitting strength, the strength will be better split into intermediate products such as maltose. Likewise, the enzyme pepsin unfolding the full effect of the splitting of proteins. This in turn leads to a more rapid bowel evacuation.

The food combining to Hay to regulate the acid -alkaline balance in the body. Hay went from an acidification of the body in "wrong" diet from. According to its guidelines, the diet consists of 80 percent of base formers ( fruits, vegetables, whole grains, almonds) and only 20 percent of acid formers ( dairy products, meat, fish, cheese, white flour and sugar). Also, there are foods neutral (butter, cold pressed oils ) which may be combined with the two groups. Between meals a pause of three to four hours to be located.

At the time, as Hay developed his diet, he suffered from a serious kidney disease ( contracted kidney ) and overweight. With the help of food combining, he could reduce his uric acid levels and overcome the disease. However, his dietary recommendations he not formulated for kidney patients, but transferred it to all people. He also claimed that this diet is able to cure many diseases of civilization that would be caused by his view through a " disregard for the laws of nature ."

Food Combining Proponents argue that health can be improved by the food combining. It is reported of a possible weight loss, improvement of bowel movements as well as disappearance or alleviation of intestinal and stomach problems. On the part of science these known also of vegetarians phenomena be explained by the conversion to primarily vegetarian diet.

Hay recommends that carbohydrates and protein for lunch, morning and evening to eat.

The three groups of food combining:

  • Among the neutral foods include vegetables, salads, avocados, blueberries, melons, fats, such as oils, a few dairy products with at least 60 % fat, peanuts (although these are not nuts but legumes) and fungi.
  • For protein group includes meat, fish and seafood, all dairy products with a fat content below 50%, milk, dairy products yogurt, cottage cheese, cheese, cream cheese, soft cheese, soy products such as tofu, most fruits and nuts, and eggs.
  • For the carbohydrate group includes bread and cakes of all kinds, wheat products, rye, crisp bread, brown bread, pumpernickel bread, white bread, etc pasta, potatoes, rice, sweeteners ( sugar, brown sugar, honey, maple syrup), and bananas.

The compilation of meals is done with the help of special tables. Those who follow the disconnection rules, will quickly find that well-known " fattening food " such as hamburgers, sausage with french fries, roast pork with dumpling, ragù alla bolognese, spaghetti bolognese, etc. combinations of carbohydrates and protein and therefore omitted. The focus of food combining is often on vegetarian products, the recorded fat percentage is relatively low. However, this depends on how the food combining diet is implemented.

It should also not be forgotten that many foods contain both protein and carbohydrates, such B.Kartoffeln, grains, nuts, etc. - what the basic assumptions Hays actually contradicts. The food combining shares the food so only on the basis of a relative weight in groups, but not that in the carbohydrate group contained only food that contain only carbohydrates.

Criticism

  • The German Nutrition Society ( DGE) does not recommend the Hay'schen food combining and holds the underlying theory for " scientifically untenable ". It refers, inter alia, that a variety of foods containing both carbohydrates and proteins and fats. It assesses the food combining as predominantly lacto -vegetarian diet. The recommendation to reduce meat consumption will however be encouraged. The nutrient supply was not secured in compliance, there could be a vitamin deficiency. In addition, bring a surplus base fare no demonstrable health benefits. Hyperacidity at ordinary mixed diet is not to be feared in healthy, because the human buffer systems maintain the acid-alkaline levels in the body constant. The conclusion of the DGE to Food Combining: " These ideas are without any scientific basis. A balanced diet according to the teachings Hayschen is limited in the long term possible because the food selection is not balanced. "
  • The German nutrition counseling and information network ( DEBInet ) writes: "The statements about digestion and acid -base balance are simply wrong. A separation of the proteins and carbohydrates is not possible because many foods contain both major nutrients. Carbohydrate and protein-splitting enzymes are released simultaneously into the intestine, so that in a healthy person, simultaneous digestion of carbohydrates and protein is guaranteed. "
  • From the perspective of most nutritionists the food combining is not suitable for weight loss because only the total number of calories consumed counts, not the combination of the food. A study by the Swiss researcher Alain Golay, University of Geneva which consequently also determine any benefits of food combining to a usual mixed diet with the same energy content.
  • In the application of food combining to Hay there may be a lack of calcium, iron ( especially critical in children, pregnant and nursing mothers ) come, high quality protein and vitamins of the B group. It is also commented that with this diet too little grain products are eaten.
  • Temporal separation of protein and carbohydrates leads to " improper " use of protein as a " spare carbs" ( gluconeogenesis ). This process can release precursors to uric acid. Uric acid is the main cause of gout.
  • Some foods are associated with incorrect or illogical to a group. Potatoes contain both carbohydrates and protein, cheese always contains protein (regardless of the fat content ), Quark always contains protein.
  • While it is true that the carbohydrate digestion begins in the mouth and the only protein digestion in the stomach, but both nutrients essentially be digested in the small intestine; there are enzymes for simultaneous digestion available.
  • A very Essenzielles food for infants, breast milk contains both protein and carbohydrates. Would it be problematic for humans to digest both together, breast milk for infants would be inappropriate.
  • The pH of a healthy person can temporarily decrease diet-related, but this can be compensated very quickly. Occurrence can acidosis (acidosis ) only during the fast, high-performance athletes, metabolic disorders such as diabetes mellitus and renal impairment.
