Ful medames

(Arabic فول ful for " sow " or " Favabohne " ) called Ful, also Medammas foul, foul Medammes or Ful Mudammas ( " on fire boiled beans " ), is a simple, common throughout the Arab dish made from Broad beans (also called fava beans or broad beans ) were prepared. Sometimes it is referred to as Sudanese and Egyptian national dish.

The dried overnight soaked beans are boiled in fresh water until they are soft. If using canned beans, the contents are heated only with the addition of a little water. In some regions, the beans are coarsely mashed and seasoned with garlic (optional ) salt and to taste with cumin and other spices. The beans are served, generously doused in a shallow dish with olive oil and topped with a sauce of finely chopped parsley and lemon juice and little chopped onion. Serve with a thin flatbread and possibly feta cheese, chopped pickles, boiled eggs or Tomatenwürfelchen.

This bean dish is served in the Arab countries with hummus, Laban and / or tabbouleh for breakfast, but can also be a snack ( mezze ) or a main dish. In Upper Egypt, especially around Aswan, Ful as falafel in pita bread served as fast food ( " Esch Ful "). In Saudi Arabia, Oman and the UAE, there are plus olive oil and ground cumin (cumin ), rarely chopped garlic.

Foul Medammes is also available as canned goods in trade, similar to the baked beans.

The broad bean is despite the name not of beans, but a legume belonging to the family of plant vetch (Vicia faba L.).
