Gault-Millau

He forgives the hoods, the next most coveted Michelin stars of haute cuisine. Contrary to the Guide Michelin, the Gault Millau is not limited to a collection, but also offers a description. The result is a sometimes cynical and sarcastic descriptions of extreme violence, which often bestowed on the leader in the past, process threats and lawsuits.

Rating system

Gastro

Four caps ( in Austria " hoods " ) are the highest honor that can reach the top restaurants. As a more detailed rating system serves a scale of one to twenty points, reached by 2004 only two restaurants, the Auberge de l' Eridan in Veyrier du Lac near Annecy and La Ferme de Mon Pere in Megeve, the maximum number of points.

For German, Swiss and Austrian restaurants Regional Issues of Gault Millau exist. In Germany have eleven, eight in Switzerland and Austria in four restaurants 19 or 19.5 points (as of 2010 ). The maximum number of 20 points has never been forgiven in Germany, Austria and Switzerland.

In contrast to all other restaurant guides are in the Gault Millau in addition to scoring a description of the restaurant visit. The higher the restaurant is rated, the more text devoted to the leaders of these often failed criticism.

Kohnke spoke out repeatedly against the use of flavor enhancers and other artificial additives.

  • 2003, the award-winning Düsseldorf restaurant has been ruled out, " Mongo " from the rating after the chef Jean -Claude Bourgueil publicly expressed to have used for a court glutamate.
  • In 2008 he announced as the then editor in chief, the Gault Millau would in future pay more attention to the use of such substances and sanction their use with point deduction. In the context mentioned Kohnke, he thought the trend chef Ferran Adrià is overpriced, but I generally have no problem with creative cooking per se, or even the so-called molecular gastronomy.

In his view, objectionable substances are, for example, transglutaminase, methyl cellulose or xanthan.

Wine Guide

Five grapes is the highest grade for the world's best wine producers.

The tastings take place not as a blind tasting, but open. The jury members know so from the outset, the winemaker, the vintage and the variety. Every year teams compiled of good tasters who travel to the nominated wineries and taste the wines on site.

Criticism

Come in for criticism is the publisher when it was announced in July 2009 that he anschrieb reviewed wineries in order to contribute financially to the printing of the new wine guide.
