Thioterpineol (p- Menth -1 -en -8 -thiol ) is a flavor component of grapefruit juice and the material with the lowest known odor threshold. Already 10-4 ppb of the racemate are perceptible in aqueous solution. Thioterpineol one of the sulfur analogs of alcohols, thiols. Thioterpineol contains a stereocenter, and is therefore chiral. Thus, there are two mutually mirror-image stereoisomers of Thioterpineols: (R) - Thioterpineol and (S) - Thioterpineol. Racemate [ 1:1 mixture of (R)- Thioterpineol and (S) - Thioterpineol ] is referred to as (RS)- Thioterpineol.
