Graviera

Graviera (Greek Γραβιέρα ) is a hard cheese that is known throughout Greece and is produced in many parts of the country.

The Graviera Crete is prepared unlike other Graviera species either exclusively from sheep's milk or with addition of goat's milk. Under no circumstances will use cow's milk. Besides Kefalotiri he is one of the most widely used hard cheese types. Old and matured it can also be rubbed well, for example, over salads or pasta dishes.

The Graviera produced in the Ionian Islands is the Swiss Gruyere very close to what can be interpreted on a Swiss origin and subsequent variation of the cheese.
