Origin

The word derives from the Old English Grytt Grits for " coarsely ground grain " from. It is related to the German word grits, which is derived from the Old High German gruzzi and also called coarsely ground grain.

Traditionally, the corn is ground in a stone mill. The ground material is then sieved and separated into grain flour and coarse grains.

Many communities in the United States had until the twentieth century a separate grain mill, where the families could grind their corn and the miller leaving a portion of the corn as Mahlgebühr.

About 75% of the ground corn is sold in the southern states, the so-called Grits Belt ( Grits Belt ), which extends from Texas to Virginia. The state of Georgia declared grits 2002 official national court. Similar regulations have been introduced in South Carolina, where there is something pathetic to say in a statement:

" The South has enjoyed his Grits throughout its history, made it a symbol of his eating habits, its customs, its humor and its hospitality. In the State of South Carolina each community was the site of a corn mill and each municipality in the state was only dependent on their own products. Grits were a part of life of every inhabitant of South Carolina regardless of race, education, gender and income. Grits could very well play in the future an important role not only for this country but for the whole world. "

In The Post and Courier of Charleston, it was called 1952:

"As a cheap, simple and easily digestible food Grits should be popular worldwide. If there were enough people would have no reason to fight. A saturated Grits man is a man of peace. "

Yellow Grits is, the entire corn kernel, while white grits from peeled corn. Grits is made by simply boiling the ground grains with water. Is allowed to evaporate as water until the pulp is semi-solid.
