Gueuze

Geuze, or Gueuze is a Belgian specialty beer. It is produced by mixing usually one year old, not yet fully fermented, old, usually with two to three years Lambic. The mixture is then bottled, where carbon dioxide is produced by a second fermentation, among other things, that has been lost during Lambic from storage in casks. By the second fermentation, the product is acidic and developed its characteristic aroma. The origin of the name is not fully understood. The Germans often lead him back to the Goslar and medium German Gose. Production

The beer is fermented without the addition of purebred brewer's yeasts. In addition to the typical spontaneous fermentation for the Brussels area yeasts also get bacteria in the broth, so that this gets his milk and acetic touch and complex flavor. The beer is stored for about two years in bottles, which are provided with a cork, on the shelf - like champagne. The problem may just be the excessive carbonic acid development that distinguishes it. You can, as with champagne, lead to a positive pressure and thus the explosion of the bottle.
