Guillaume Tirel

Guillaume Tirel (* uncertain: in 1312, † 1395 ), also Taillevent ( Schneidewind ) called, was from 1381 chef of King Charles V of France, who appointed him for his services to the royal kitchen to the council. His name is closely linked to one of the earliest and most influential western cookbooks, Le Viandier. Guillaume Tirel, however, is not the author of this recipe collection, which is regarded as a key work for the development of the food culture of the Middle Ages. It could be demonstrated that the oldest version of this recipe collection came about in 1320, and thus short to the birth date of Guillaume Tirel. The later versions, however, are significantly influenced by him. Guillaume Tirel has, the French, and thus the European cuisine influenced about this cookbook that was printed to the 16th century and again.
