Work

Biesalski made work on the importance of vitamin A for the development and function of the inner ear and lung function (maturation and Mucosabarriere ). In particular, the initial characterization of storage reserves of vitamin A ( retinyl esters ) in organs and tissues outside the liver were new knowledge for the study of vitamin A metabolism. In 1995 he succeeded to prove that besides the classical distribution route of the vitamin by the liver as retinol (vitamin A1) bound to a retinol -binding protein ( RBP), an alternative, previously known only from carnivores pathway via circulating retinyl esters exist: A sibling pair with a mutation of the gene for RBP and therefore not measurable Retinolblutspiegeln showed, apart from minor skin lesions and of night blindness, no visible abnormalities that would be typical of a vitamin a deficiency. Indeed, the two young girls had the distribution path of carnivores. Later Biesalski dealt with issues of detection and treatment of hidden hunger ( micronutrient deficiency) and food security and issues of micronutrient deficiencies and their treatment ( especially vitamin C) in ICU patients. Another experimental field is the Nutritargeting first described in detail by him, which is the development of pharmaceutical formulations, which allow a specific organ supply with nutrients.

Focus of recent scientific work Biesalski include Investigations of retinoid metabolism and studies on the importance of vitamins for the health of the people. He leads or is involved in research projects of the Federal Ministry of Education and Research (BMBF ) on world hunger and food quality. Biesalski is editor of fourteen books and has published 280 works. In 2013 he published the book The hidden hunger.
