Henriette Davidis

Johanna Friederika Henriette Katharina Davidis ( born March 1, 1801 in Wengern, † April 3, 1876 in Dortmund ) is considered the most famous cookbook author in Germany. Although at the same time many similar cookbooks have already appeared and inter alia the General German cookbook on Civil households by Sophie Wilhelmine Scheibler was repeatedly reissued, the Practical cookbook developed into the cookbook of the late 19th and early 20th centuries, the basic equipment many German households belonged. Show many copies still available antiquarian, that the books were brisk used and annotate. Many families inherited further the practical cookbook from generation to generation.

However, the cookbook was only part of a comprehensive educational program that Henriette Davidis for girls and women designed. From the dolls cook about the young unmarried woman to soccer moms with their own responsibility for budget and staff offered Henriette Davidis ' books in as textbooks and reference books. Behind it probably was the realization that the work of the housewife was a separate demanding profession, to which the young women of the emerging middle class were often inadequately prepared.

Davidis was while she wrote her books, even as a home economics teacher, educator and governess, and later worked only as an author. Although her books, especially the practical cookbook that appeared already in the 21st edition in her death, have been very successful already in their lifetime, they could only lead a rather modest life from the income and moved at the age of 74 years own apartment. It is sometimes stated, " Henriette Davidis " was a pseudonym of Helen Clemen, but in reality it was at Helena Clemen to a reader who sent suggestions to the author, which were also used.

Today, Henriette- Davidis Museum in weather Wengern recalls with exhibitions on cookbooks and a series of publications to her. The German Cookbook Museum in Westphalia Park in Dortmund also devotes much of his exhibition. Part of a stone hearth, dating back to the rectory in Wengern were walled with a plaque in the abutment of 1934 completed railway bridge in the Elbschetalbahn at Wengern where they can still be seen today. The parsonage had to give way to the construction of the bridge.

Life

Youth and Education

Henriette Davidis was born in 1801 in Westphalia Wengern an der Ruhr, today a district of the weather, the tenth of thirteen children of the pastor Ernst Heinrich Davidis and his Dutch wife Maria Katharina Lithuanians. Ernst Heinrich Davidis had been ordained in 1780 in Amsterdam, had worked for nine years in the Dutch city of Breda as a garrison preacher and then started a job as assistant preacher in Wengern. In 1792, he assumed the pastorate.

After the confirmation Henriette left her parents' home in 1816 and moved in with her older sister Elizabeth to Schwelm who was there married to the lord of the castle of Hausmart field. In Schwelm Henriette Davidis visited the girls' secondary school for two years. She returned in 1818 to her parents' home. There, too, she was a student of a higher private school for girls. Later she moved to Bommern to her sister Albertine, to help in their estate and the education of four children. When her father died in 1828, she returned to Wengern and took care of her mother until they also died in 1838. Then she accompanied a sick lady in Switzerland, before she moved in 1840 after Windsheim.

From 1841 to 1848 Henriette Davidis worked in the house Heine as an educator at a girls' school work in Sprockhövel. During this time, appeared in 1845 her Practical cookbook. Reliable and self -tested prescriptions of ordinary and finer cuisine, in 1847 and 1848 followed the arrangements to small and large companies and the practical instruction to prepare the Roßfleisches that aufgingen later as an appendix in the practical cookbook. For the practical cookbook Davidis had extensive research operated and collected over a longer period recipes.

Work as a teacher and author

After the time in Sprockhövel Henriette Davidis worked in Bremen as an educator and a governess. In 1855 he returned to the Bommern to her sister Albertine, where she remained until 1857. During this time she has to, possibly inspired by the success of the cookbook, have decided, in addition to pure cookbook to write a more comprehensive home economics and educational writings for young girls and women. In 1850 appeared The vegetable garden as Part I of a planned Full housekeeping book, the same year she also wrote another unpublished book on nursing, followed in 1856 dolls cook Anna, in 1857 and 1858 The Virgin Dolls mother Anna. However, the planned multi-volume housekeeping book did not materialize. After a band of poems and short stories appeared in 1861, the housewife. Practical guidance for independent and economical management of the household, which was the conclusion of the training program for aspiring housewife.

In May 1857 she moved to Dortmund, where she worked, and later lived in his own apartment to sublet until her death. At least now she could probably live on their publications. In addition to working in Virgo and homemaker she revised her earlier works that are already sold well, for new editions. From the 1860s wrote Henriette Davidis, which should have already been regarded as a recognized authority in home economics questions now, even regularly for magazines such as home, one patterned after the gazebo magazine that was aimed at a middle-class audience and was published from 1865 to 1944. During this time she also published two other shorter writings: Dietetics for housewives. The health and medical care in the home ... and force of Liebig's extract of meat kitchen for higher and indigent circumstances. The latter was drafted on behalf of the company Liebig advertising brochure, which cleverly combined the presentation of the merits of the newly developed Liebig's meat extract with the " seal of approval " of the trade woman Davidis.

Henriette Davidis remained unmarried (two fiancee died, respectively, before it came to marriage) and not himself lived the life of himself back accepting devotional housewife, which she promoted in her books. Being a working woman and successful author she sat apparently even in contradiction to their works. The reasons for this are, however, no longer be ascertained today, also because the manuscript created in the summer of 1874 the author's memories of my life and work remained unpublished and is lost. Henriette Davidis died on April 3, 1876 in Dortmund. Her grave is at the Dortmund Ostenfriedhof.

Disputes with publishers

Henriette Davidis was as author of the Practical cookbook initially not in a strong bargaining position against the Velhagen & Klasing, in which she published her first work. As most authors she was probably first and foremost aim is to publish the book at all. Presumably she was not informed of the nascent beginning to emerge Copyright still about common fees and was not taken as a wife by the publishers as a contractual partner too seriously because they appropriated the publisher the cookbook for a fee of 450 thalers as the property without further rights to the text reserved. Later, they threw the publishers before: " Full-body ignorance in such matters, as it was to me then own, could only to a Kontract like ours go (...) ," because the sales success of the book she was not involved and was also for the revisions only comparatively low fees (50 dollars for the 2nd edition, later 100, according to the 5th edition of 200 pounds). As early as 1856, however, she was so experienced that they could appear at Grote in Dortmund puppet cookbook because it was the fee offered by Velhagen & Klasing too low.

The revision of the 12th edition of the Practical cookbook, for which they should receive only 200 dollars again, it was 1867, armed with the publisher: " Rent, Tax, frugal living, clothing and other expenses; I could never spare them (...) while you enjoy gentlemen, the ripe fruits of my labors. ", the publisher finally responded to the confident appeal with an increase in the fee to 300 dollars. It was followed by further revisions, extensions and disputes over the content and layout of the book, to Henriette Davidis at the publishers finally able to thank you in July 1875 for 1000 Taler obtained by the vastly expanded 20th edition.

Importance as a writer

Henriette Davidis ' works can be classified under the women's literature, as in the second half of the 19th century ruled a large part of the book market in the form of decency books and books but also poetry anthologies, quote treasures and whole libraries of processed specifically for women classic. This often written by women for women Housekeeping books and women's Breviere had " in addition to their primary counselor and consolation function ... standards and system- sustaining ." Even though her own life of a working woman can be considered a rather atypical and how the correspondence obtained proves with their publishers, certainly knew how to say, Henriette Davidis moved with their work within a given framework of social conventions and bourgeois norms. Their readers should not step out of that framework, but rather are able to prove themselves within their family environment.

In response to the rise of the bourgeoisie in the 19th century, the cookbook literature had changed: The Civil kitchen was to the notion of elementary education and declining cost of printing enabled broad sections of the access to this kind of literature. At the same time the bourgeois nuclear family began to emerge, in their domestic focus was the housewife who used the cookbook as an educational and textbook. Cookbooks itself had previously directed rather to professional chefs, they now offered a systematic approach to the basics of cooking and housekeeping, the consciously directed and beginners alike. The Practical cookbook developed against this background, a popular wedding gift.

Even during her lifetime Henriette Davidis was regarded as authority in matters of financial management. In the 1860s and 1870s were their expertise, today we would talk about Testimonials, especially for advanced innovations sought-after advertising medium. She spoke out in favor of devices and products as for the gelling agent " agar agar " or Liebig's extract of meat for which manufacturers printed the expertise along with her portrait on the packaging of the products. In her books she repeatedly mentioned in passing certain products, manufacturers and brands. Whether these honorable mentions and expertise learned a consideration by the advertised companies, unfortunately, can no longer be determined.

To mark the 25th anniversary of the Practical cookbook were " thoughtful and humorous congratulations, beautiful art, fine wines and flowers " on with the author, who now spent several hours every day to respond to requests from readers.

All works were often revised, extended and again hung up, partly translated. The practical cookbook and a housewife were also specially edited and published from 1879 onwards for German in the United States in Milwaukee in German language, but with American measurements and partially matched ingredients, dolls cook Anna and The Housewife published in Dutch in Amsterdam.

Works

Practical Cookbook

Henriette Davidis ' major work was published in 1845, entitled: Practical cookbook. Reliable and self -tested prescriptions of ordinary and finer cuisine. Practical instructions for the preparation of various dishes, hot and cold beverages, jellies, Gefrornem, baking plants, as well as for canning and drying fruits, with particular reference to the beginners and aspiring housewives in an edition of 1000 copies. Even at the sixth edition of 10,000 copies were printed, later editions included up to 40,000 copies.

Henriette Davidis even asked by their publishers for an advertising text, wrote in 1856 about the cookbook: First, our book contains only reliable rules, mostly self -tested, but are not there solely the good recipes, (...), it is also the clarity and consideration that have been taken in the processing of very inexperienced, so that the book as a guide, as it would serve. This has been achieved. As I generally hear kids can cook then, but completely untrained young women. The good Advised increases the pleasure and soon makes good cooks.

The cookbook contains an extensive recipe collection, Henriette Davidis not only compiled, but, as she points out in the preface, also tested himself and had modified:

"Again, the number of cookbooks reproducing? " - Some will ask, who sees the display of this book. There are, their pretty much, and some that are known to me, it lacks versatility by no means; nevertheless some practical housewife and cook will have convinced yourself that many are edited only in theory and the enclosed prescriptions can not always be applied with certainty by the same often based on ignorance, often worn together on good faith, often of precious, strange parts exist, which are not suitable for every kitchen and succeed only in the hands of a skilled cook, but not at the same time beginners can serve as a guide for the preparation. I am far from wishing to this book, as one own work, provide high; Only I can say that with the exception of some prescriptions, all by myself tested gradually improved and composed and that I included only those, whose accuracy I am convinced (...).

This preface is followed by a short introduction, in which Henriette Davidis four basic requirements for the housewife formulated: cleanliness, thrift, care and consideration. The table of contents includes the components A- V: General Preparation Rules; soups; fish; vegetables; puddings; casseroles; Eggs, milk and pastries; pies; Meats of all kinds; Jellies and Gefrornes; dumplings; creams; compotes; salads; sauces; Baked goods; From canning and drying of some fruits and plants; From canning and drying of some vegetables; Drinks and liqueurs; Making sausages, Einpöckeln and smoking of meat; Vinegar.

General comments on the cooking, cookware, or certain foods are very scarce and are limited to a minimum. The individual chapters are sometimes further divided, eg according to the different types of meat. Each chapter begins with basic rules for the preparation of the respective foods. Within the chapters, the recipes are numbered, but the order seems chosen by chance. Quantities, cooking times or temperature data are missing, as in German cookbooks was common until the end of the 19th century. At the end of each recipe is indicated, however, in which dishes the court should be applied, which also accounts for an approximate amount specified.

" 1 Rules when cooking the vegetables All vegetables must be thoroughly cleaned, washed, cut and equated to fire; but may previously not too long in the water. Potatoes make an exception here. Vegetables that you can put on before in butter, rather gahr, as such, which one brings water to the fire. "

" 41 Stuffed cucumbers Do this, select large cucumber, peeled and cut them to about the middle, lengthwise one, the core house takes out with a spoon, it leaves in salted water with vinegar some boil times, she does it in cold water and fills them after they are dry, with a veal farce. Then the cucumbers are fed presses, with a thread tightly wound, in broth, butter, seasoned with nutmeg, gahr cooked and, before serving, something poked rusk it. A medium bowl. "

Later editions are accompanied by an extensive appendix, which contained proposals for hosting guests and seasonal structured menu suggestions. These were originally published as a separate publication ( Arrangements for small and large companies to breakfast, lunch and dinner, coffee 's and tea 's and a kitchen list sorted according to the seasons ), and was later integrated into the practical cookbook.

The book became the standard work of its kind and achieved a fame that went beyond Germany - as it happened in 1879, when a special edition for German abroad in Milwaukee appeared in the United States. The editors emphasize in the preface that they were " followed the generally recognized as the best cook book by Henriette Davidis. "

After her death, the practical cookbook first of Louise Rose Village (1821-1890) and from the 32nd 1892 by Louise Holle was continued. Louise Holle revised the cookbook comprehensively. In addition to technical innovations they added mainly dishes of " fine dining " and " health food " and a chapter "On the utilization of residues " added. Also the presentation of the food, suggestions for dining list and a chapter on the "art of business" turned the originally pure cookbook, increasingly, the housekeeping book. The book is now also an alphabetical index precedes. The Practical cookbook published in revised form even in the 1990s, before the expiry of the rights in 1906, there were also numerous after-sensations, even rather obvious plagiarism (eg, already in the 1880s the New and proven Illustrated Cookbook for all items of a certain H. Davithis ).

The vegetable garden

The vegetable garden was published in 1850 as Volume I of a planned full Housekeeping book with the subtitle Practical instruction to get a vegetable garden with consideration of beauty and abundant yield; and all that is necessary about the location, soil, Umzäunnung, installation, fertilizer, gardening implements, culture of plants and fruit-bearing shrubs, seeds contraction, duration of seed vigor, the required quantity of seeds and how to alternate with the vegetables most appropriate is that the program content of the book describes in detail already. An appendix also dealt with pest extermination, and the preservation of vegetables. From the fifth edition in 1863 the book under the new title The kitchen and flower garden for housewives appear. At this time, now Virgin, housewife and the two dolls books were published, Henriette Davidis seems to have plans for the multi-volume Housekeeping Book finally abandoned. The new edition had been expanded to three chapters, in particular the growing vegetables for sale devoted themselves another edition contained 1866 also a chapter on medicinal herbs and their use. The book was published in numerous editions, was later revised by other authors and is therefore likely to have found widespread use.

Dolls cook Anna

In a sense, as an offshoot of the successful practical cookbook appeared in 1856 a cookbook for children: Dolls cook Anna. A practical cookbook for little girls love. The cookbook was directed at girls, which the dolls mother Anna, the ideal image of an obedient and sensible child, and her mother explain how they can prepare small meals or " dolls food" on Puppenherd or with flowers and grasses. The book became a success with the public and in nine editions until 1898 reprinted again and again. Formally, the puppet cookbook is obviously modeled on the Practical cookbook. The advantages of the exemplary dolls mother Anna suggest what behavior is expected at the time of little girls, on the other hand it also shows, so little girls their mothers then obviously plagued.

The recipe section is preceded by a relatively long introduction:

For small -hearted girls who like to learn reading, writing and knitting and are quite docile, this puppet cookbook is intended; and since we want to hope that there are many to whom the dear Christ-child or the mother could bring it to birthdays. [ ... ] But who receives this cookbook must follow, which teaches the dolls cook Anna. Listen carefully to how they did it. They plagued the mother never to give her all sorts of goodies for cooking, no, they took kindly and gratefully towards what was given to her. Missing her certain parts which belong to the court that she wanted to make it so she chose another immediately, without making an unfriendly or even tearful face. [ ... ]

The book in octavo is divided into two " divisions ". The first contains " dishes, which are made on the Puppenherd " " to prepare foods without hearth " and the second section is dedicated to the " flowers kitchen or food for the dolls ." As in the practical cookbook, there are also chapters for soups, then for vegetables and potatoes, rice dishes, etc. The individual recipes are simply numbered like the prototype within the chapter. In the greater part of the recipes are desserts that are to be produced mainly from milk, semolina, rice, eggs and apples, that is based on a limited selection of ingredients. Most of the recipes are really easy and do not require complicated work steps. In the vegetable recipes and detailed instructions for cleaning and Vorrichten the vegetables are included. In contrast to the practical cookbook, the ingredients are listed here at the beginning of every dish. The "flower food" based on common garden plants and grasses, as they may have been at that time easy to obtain for each child. Unlike the pedagogical impetus of the remaining book suggests, it is about creative, relatively " meaningless " games - an unusual in this form and downright reformist approach.

"10 beer soup A cup of beer, one egg, toast and as much sugar as the mother gives to the soup. Boil the beer with a cup of water and the sugar. Meanwhile occurs because an egg yolk with a tablespoon of water in your Terri Nchen, pours slowly with continued stirring the cooked beer and give added into rusk rolls, so you have a nice beer soup with Zwiebackklößchen. "

Example of Second division, flowers kitchen or food for the dolls: "12 congee For this purpose, you can take your Marie flowers. Go and pick the little leaves from them, it addresses a bowl or sheet, and sprinkle a little flour over brick; so the dolls also have their cinnamon rice pudding. "

Other dolls cookbooks published in the 19th century by Charlotte Christine Riedl (1854 Little cook) and Julie Bimbach (1854 cookbook for dolls or kitchen first instruction for cooking for girls from eight to fourteen years ). The success of the book by Julie Bimbach that already experienced four editions in the year of publication, Henriette Davidis motivated in the fall of 1855 to urge her publisher to publish a cookbook for some time planned Dolls finite. As the publisher of Practical Recipes book, Velhagen & Klasing in Bielefeld, hesitated, and also the fees demanded by Henriette Davidis ' did not want to accept, she moved further ado the publisher, so Dolls cook Anna appeared at Grote in Dortmund. Later the puppet cookbook was supplemented by dolls mother Anna, a history book that sought to awaken in young girls a sense of " family life and economy ", and dealt with issues of financial management. Although both works sound today indoctrinating pädagogisierend and Biedermeier way it was back then, and probably also from the perspective Henriette Davidis ' is a novel, not necessarily self-evident contribution to the playful education of girls.

The profession of the Virgin

The Virgin appeared in 1857. Words of the Council to prepare for their profession (from the 2nd edition under the revised title The profession of the Virgin. A dowry for daughters of the educated classes ). The title, which is aimed at young women, so to unmarried women, makes it clear that Henriette Davidis understood the housewife as a profession that required a preparation and training. With this book she wanted, as she writes in the preface, " the Virgin show ways and means to prepare them for their future life profession in a practical respect. " But not only that: " even the higher duties of life, the moral and religious side of their effectiveness has been thought. " Much like religious devotional literature should not be used only for instruction, but also a comforting companion and reference the book to young women.

That it should not only go to practical issues, shows a letter Henriette Davidis ' to their publisher, in which she writes: " ... I do hereby the manuscript to the Virgin. The little work to connect its proposal in accordance with the housekeeping book, would not be feasible in the way. This is not just my opinion, more insightful women agree that the housekeeping book material as possible should be kept. "

This and similar books show how isolated, helpless and overwhelmed young women especially at the beginning of a marriage often must have been. Because of the strict division of responsibilities within a marriage, the husbands usually should not have been a great help in budgetary matters, on the contrary, this type of literature holds multiple advices prepared to compensate for the failure of the husband by thrift and creativity in financial management. Loading and payment made in satisfaction of the husband and in meeting the social expectations of a housewife. So Henriette Davidis is because also states that " there are only a few and at least the female part granted [ is ] to make the lives of your choice and inclination and to live the higher spiritual interests. Especially the female professional, [ ... ] takes in most cases, hand and mind so much claim that only a few hours of leisure allow you to go out of the circle of professional life also. " Because of their own professional experiences in which she obviously quite mandatory inclination and tried to agree Henriette Davidis should have known very accurately at this point what she was talking.

The housewife

The Housekeeping Book, the Davidis had mentioned in the delivery of the manuscript of The profession of the Virgin, was released in 1861, self-published, together with his friend the publisher Artur seaman under the title The housewife. Practical guidance for independent and thrifty household management, a dowry for young women to promote domestic prosperity and family happiness. The book was a comprehensive household counselor and completed the education program for the housewife. From today's perspective it allows excellent insights into the bourgeois home and corporate culture of the 19th century, because Henriette Davidis not only describes in detail how, for example, set up a home, but also a detailed explanation of the purpose for which a particular device is used and what effect is to be achieved it. Besides fitment issues and the activities in the house is dedicated to the author and the relationship between housewife and servants. Here she admonishes the responsibility of the housewife as an employer, the staff adequately accommodate and care for them. But the greater part of the work instructions take one for the processing of food.

After Davidis ' death her nieces Theodore led away coaches and Emma Heine the book. The nieces gave from 1882 also a shortened version under the title Little Cookbook for civil and rural household out who experienced a total of six runs.

The publisher Velhagen and Klasing left the Practical cookbook by Henriette Davidis ' on death continually update and revise. The 25th to 31st Edition ( 1882-1891 ) developed Luise Rose Village ( 1821-1890 ), who had in 1874 published under the name Henriette Sander even a cookbook. The 32 to 62 edition ( 1892-1942 ) comes from Louise Holle ( 1864-1936 ). She is the best known of the later editors inside and was led from the 38th edition as a co-author in the book title. They amended and restated the cookbook considerably and later gave their own cooking and housekeeping books out. From 1933 to 1951 The new cookbook for the German kitchen appeared under the title also at Velhagen & Klasing a small cookbook that Ida Schulze ( 1878-1970 ) had worked out on the basis of the practical cookbook. This " little" cookbook was also parallel to the version of Louise Holle a sales success.

After 1906, the term of protection had expired for the original work, a number of extracts, reprints, revisions and new versions also appeared in other publishers. The most famous are the Erna Horn, Elsa beer, Gertrude Wiemann and Rudolf Zäch. Even dolls cook Anna and the vegetable garden were launched yet for decades in ever new versions again. Reception

Since its release the Practical cookbook has been continuously revised to 1951 for the use and repeatedly reissued. From the 1960s there was a return to the original, although the henceforth appearing expenditures were also edits for use in the modern kitchen (for example, by Erna Horn or Roland Gööck ), but expressly based on the first edition. They were also up in the 1990s launched and revised again and again. In 1977, the first unchanged reprint of an old, edited by Louise Holle edition of 1898, of 1994 another unaltered reprint of the edition of 1845. During the 1990s, the first publications that deal with the person and role of Henriette Davidis appeared, mostly in a series of publications of Henriette- Davidis Museum in Wengern. There, in 2002 dolls cook Anna appeared as a reprint and a modern processing of puppet cookbook for young people. Appeared in 2002 in the United States a reprint of the American edition of the Practical cookbook of 1904. Terms of the number of copies sold of the practical cookbook in more than 160 years so far, Henriette Davidis place in the study of popular culture and women's biographies of the 19th century however, still little attention.

However memorials in and around Wengern and the Henriette- Davidis Museum ensure that Henriette Davidis is firmly established, at least in local awareness of their home region. In 2006, Henriette- Davidis Museum issued a series of translations ( in English, Norwegian, Polish and Serbo-Croat ) of the child cookbook dolls cook Anna.
