Herrgårdsost

Herrgårdsost is a Swedish cheese and can be translated as " mansion cheese ". It can be assumed that he was traditionally made on larger farms in central and southern Sweden.

Herrgårdsost has the size and shape of a wagon wheel. It weighs 12-20 kilograms. The cheese has a firm texture, is of a pale yellow color and has pea-sized holes. Its natural rind is yellow and thin.

The Herrgårdsost is made ​​from pasteurized cow's milk. The milk is curdled with rennet, cut the break, heated with stirring and pressed into shape. Then it matures for at least three months. His maturation period may be extended, then the consistency of the dough firmer and the cheese is spicy.

Very similar to Herrgårdsost is the, also from Sweden cheese Grevé (pronounced Grewe ). It differs only slightly. It also has the shape of a wagon wheel, but is slightly smaller. He is mature only after ten months and has a mild flavor.
