Himbeergeist

Himbeergeist is a fruit spirit.

It is produced by distillation of a mixture of neutral alcohol of agricultural origin and fresh, unfermented raspberries. The minimum alcohol content is 40 % by volume. The Himbeergeist may no flavors or dyes are added. A very aromatic raspberry liqueur obtained with the use of wild raspberries.

Since raspberries give a little alcohol because of the low sugar content from 4.5 to 6.0 %, a spirit is usually prepared therefrom. The mixture of raspberries and alcohol is macerated few weeks, so that the taste and the scent is transferred to the alcohol. The whole thing is driven off in a fine fire ( separation of solids from alcohol).
