Himmel und Erde

Heaven and earth ( in the Rhineland: Himmel un Ääd ) is a traditional Rhenish, Westphalian, Lower Saxon and Silesian dish of mashed potatoes and apple sauce. In the Rhineland, one takes traditional fresh potatoes and fresh apples diced, cooked, but are not stamped.

The court has been known since the 18th century. It takes its name from the formerly widespread and common today even in different regions Erdapfel name for potato, so that " heaven" for the apples on the trees and " earth " for the apples in the earth as the main constituents of the court stands.

Frequently "Heaven and Earth " along with (smoked ) fried black pudding, fried onions and fried bacon or sausage is served. In the region around Hamburg black pudding is one of them.
