Humulone (also α - Lupulinsäure ) is a bacteriostatic bitter substance from the resin of ripe hops Humulus lupulus. its rearrangement products formed by heating (especially cis -and trans- isohumulone ) give the beer its characteristic bitter taste, he is counted among the hop bitter compounds.
