Jamón serrano

Serrano ham, Spanish Jamón Serrano ( xa'mɔn se'rano ), is a Spanish dry-cured ham.

Characteristic of Serrano ham is his lean, hard fibrous meat with mild- aromatic note. In contrast to the much more expensive Jamón Ibérico cured ham usually originates not from swarthy Iberian pigs ( cerdo Ibérico ). Rather, the meat skinned pigs used for Serrano ham, which is why he is in Spain also called jamón de pata blanca ( " ham of the white claw "). The ham is Paleta Serrana called while the ham is called jamón serrano. Qualitatively, can not see any major differences except that the ham can be cut into larger slices and a bone share of about 30 %, against 40 % for the ham.

The name comes from sierra Serrano, the Spanish word for mountain. Originally matured serrano ham in the fresh mountain air. Known for this type of ham maturity, for example, the place Trévelez in the province of Granada.
