Kakigōri

Kakigori (Japaneseかき氷or欠き 氷, dt " shaved ice " ) is a Japanese candy and ice cream preparation.

The popularity of the dish is clear, among other things, that it (かき氷 祭り, kakigori matsuri ) are special in Japan kakigori festivals.

Production and varieties

The actual ice-cream is produced by a kakigori machine (かき氷 機, Kakigōriki ) in which a block of ice is clamped, of the ice cubes then scrapes a blade, so the result is a build-up of loose flakes. Traditionally, the machines that are to be found in many households, crank operated, modern versions but electrically.

The ice is then usually eaten with syrup, which in flavors such as strawberry, cherry, lemon, grape, melon, green tea, Blue Hawaii ( Curaçao) or combinations thereof. It then condensed milk is added to further sweetening. As a side dish comes to kakigori also fruit or red bean paste.

Name

Kakgori has different names in different regions, such as Senji (せんじ) in Chubu, Mizore (みぞれ) in Kyūshū or Kachiwari (かち 割り) in Kansai.
