Kalua

Imu is the Hawaiian term for an earth oven or cooked in foods. This method of preparation is called Kalua, which, for example, the name is derived Kalua pig or Kalua PUAa for the cooked pork in this way.

To this end, a depression in the earth is lined with hot stones. The pig is wrapped in bananas and Ti sheets placed on the stone and covered with soil. Over a period of about 9 hours, the pig is cooked in the imu. Also Laulau, a wrapped in Ti leaves mixture of beef, pork, chicken or fish with Tarospitzen is baked in the imu.

This ceremony is usually the center of the luau.
