Kama (food)

Kama or talkkuna is a mixture of roasted barley, rye, oat, pea and bean flour. Depending on the location varies the mixture. Sometimes the oat flour is completely replaced by wheat flour or flour of black beans is part of this mix.

Kama is a typical ingredient of Finnish cuisine or Estonian cuisine. Nowadays it is used for some desserts. In Estonia, it is usually for breakfast, mixed with milk, buttermilk or kefir enjoyed as porridge, often with sugar, less often with fruit or honey, sweetened or sharpened with a little pepper. It is also used for milk or cream desserts, along with Finland and Estonia also typical forest berries.

In northern Russia, a Kama similar dish is called tolokno. It is in large parts of the territories of Karelia, Arkhangelsk and Vologda and further a common dish.
