Karasumi

Karasumi (Japanese鱲 子/カラスミ) is a specialty of Japanese cuisine from the area around Nagasaki. It is together with Uni ( sea urchin eggs ) and Konowata ( cured Seegurkeninnereien ) one of the three most famous Japanese Delicatessen ( Nippon Sandai chinmi ).

It is made from salted and dried in the sun mullet roe.

The name is from the resemblance to a block Sumi, black ink, come from China ( Kara ) was imported and used in the Shodo. However Karasumi bright blocks are the best quality.

Karasumi is an expensive delicacy. For this sake is often drunk. It is also served as a constituent of kaiseki.

Is mullet roe on Sardinia in Italy ( Bottarga ) and Taiwan (especially in Donggang City ) eaten.
