Kushari

Kuschari ( Egyptian Arabic: كشری ) is a traditional Egyptian dish simple. Often it is available in food stalls that serve nothing else, and provides for both locals and travelers the cheapest way of satiating food dar. Kuschari typically consists of black or red lentils, rice, small pasta (usually a kind of short macaroni ) and chickpeas (optional ). The ingredients are usually cooked separately, then mixed and seasoned with vinegar, tomato sauce, garlic and onions. Almost always Kuschari is a vegetarian dish, but there are a few variants with minced meat.

Maybe Kuschari is related to the Indian Khichdi, also a vegetarian dish based on rice and lentils.
