Leipäjuusto

Leipäjuusto ( " bread cheese " ) is a hard cheese from the colostrum of the cow, so the milk, which gives this directly after the throw of a calf. He's from Northern Finland and Kainuu. Leipäjuusto is baked, grilled or flambéed, to give it its peculiar brown or charred drawing. In Ostrobothnia Leipäjuusto Juustoleipä is called.

Fresh Leipäjuusto is dried for several days in an airy place. Fresh or dried Leipäjuusto is sometimes given in a cup and doused with coffee. Mainly Leipäjuusto but is eaten with cloudberry or cranberries either cold or baked from the oven. Often it is also eaten as an accompaniment to salads and there are also cake recipes with Leipäjuusto.

The most famous factory for Leipäjuusto is also simultaneously a highway rest stop (VT 3 ) near Jalasjärvi in which you can eat and buy all kinds of Leipäjuusto.
