Ljutenica

Ljutenica ( Bulgarian Лютеница, serb.: Љутеница what in German means " sharp ", ljuto means sharp ) is a Bulgarian, Serbian, Macedonian, Bosnian, Croatian and Romanian preparation of grilled peppers and tomatoes along with salt, vegetable oil and spices are processed into a puree / spreads. She is one of the traditional types, peppers and tomatoes to preserve for the winter.

At harvest time, the smell of grilled peppers in the villages of Bulgaria and Slavonia is ubiquitous, and there are numerous recipes in circulation that differ even from town to town and family to family. Depending on the recipe also carrots, chilli, parsley and sometimes eggplants are processed. Other names / variations are Ljutika ( with onions ) or Apetitka ( sharper ). In Bulgarian supermarkets dozens of different varieties are available.

Even in the neighboring countries of Bulgaria similar preparations are known, eg

  • Bosnian, Croatian, Serbian and Macedonian Ajvar ( sharper and bright orange, without tomatoes, vinegar / lemon juice and garlic)
  • The Macedonian and Serbian Pindjur Pindjur ( as Ljuteniza, in addition eggplant and onion)
  • The Romanian ZACUSCA with peppers, eggplant, onions and tomatoes, with beans, celery or mushrooms
