Lobio

Lobio (Georgian ლობიო ) is a traditional bean dish of Georgian cuisine, which is served as a side dish or alone as a fast food.

To prepare red beans are soaked in water first. Then you boil them in salt water, which is changed at least twice. When the beans are cooked, they are easily mashed and seasoned with fried onions, coriander and parsley and hot peppers ( chili peppers ), salt, pepper and garlic. The standard dish includes walnuts. There are variants of Lobio, made from other beans and spiced differently. Milder forms are prepared with white beans and dill or fresh green beans and egg.
