Maltol is a cyclic, unsaturated ethers and flavoring in malt and caramel. It is used as a flavor enhancer in confectionery and is approved as a flavoring in food.
Use
In food flavors with caramel note, as a flavor enhancer, eg in fruit flavors ( it already effective below the taste threshold of about 5 ppm) or in sodas as a partial replacement for sugar.
