Matsumaezuke
Matsumaezuke (Japanese松前 漬け) is a pickled dish of Japanese cuisine from the area Matsumae the island Hokkaidō.
It is made from fresh ingredients from Hokkaido. Surume ( dried squid ) and konbu is wiped with a damp cloth and cut with scissors into thin strips. Kazunoko is cut into small pieces, carrots and ginger into even smaller and thinner strips. These ingredients are mixed with a once- boiled marinade of sake, soy sauce and mirin. Several strips chili can be added. Then the whole one week, marinated in a cool place until it is ready for consumption.
