Melba-Toast
Melba toast (also melba toast ) is a very dry, crisp and thinly sliced toast places that is served with soups and salads or topped with either melted cheese or pâté. It is named after the Australian opera singer Nellie Melba ( 1861-1931 ). It is believed that the term dates back to 1897 when the singer seriously ill and Melba toast was a part of their diet. The toast was - like Peach Melba - created by the cooking Auguste Escoffier, an admirer Nellie Melbas. The name probably coined the hotelier César Ritz during a conversation with Escoffier.
Melba toast is prepared by lightly toasting bread in a conventional manner; once the outer side of the toast is easily detected, it is removed from the toaster and cut with a bread knife lengthwise, so that two thinner slices arise. These two slices are toasted again.
