Merguez

The merguez ( / ' mɛʁɡəz / ) is a spicy minced meat sausage (originally only lamb, now mostly lamb and beef mixed) from the North African cuisine.

Etymology

The German word is borrowed from gleichbedeutendem French merguez ( French pronunciation / mɛʁ'ɡɛz / ). The French word in turn is a borrowing from Arabic مرقاز, DMG mirqāz ( sausages ), which was transcribed in French as merguez. The same strain also in Berber ⴰ ⵎ ⴰ ⵔ ⴳ ⴰ ⵣ amargaz ( sausages ) and mozarabisch Mirka or Merkas.

Origin

The sausage comes from North Africa. Due to the influx of Pieds - noirs in North Africa in the post-war period it was popular in France. From there it spread to the rest of Europe as part of the Maghreb kitchen or on its own as grilled sausage ( especially in France neighboring areas ).

Ingredients

The sausage is made of streaky lamb and beef. The mass is previously seasoned strong. Are typical spices such as cumin, paprika, garlic, harissa and pepper.
