Merkén
Add to Favorites or Merquén (of mapudungun remember) is a traditional seasoning salt of the Chilean Mapuche indigenous people, which is used to this day in the Chilean cuisine. It is a sharp, reddish powder, consisting of smoked red chili, coriander and salt.
Preparation
To produce is smoked and dried chilli, called " Cacho de Cabra " with roasted crushed coriander seeds and salt.
The traditional manufacturing process is very time-consuming. The harvested green chili is allowed to ripen until they get their deep red color. Then they are dried in the sun, roasted over a wood fire and completely crushed with a pestle. The powdered chili will now continue with the coriander seeds and salt rubbed.
The approximate composition, 70% of chili, 20 % salt and 10% coriander.
Besides the usual " Remember especial" there is still the " Remember natural", which is made without cilantro.
Applications
Originally a spice of the Mapuche of Chile's Region XI, the use of notice instead of pepper is now widely used in Chile for a variety of exotic and traditional dishes.
