Monellin

Monellin is a natural sweetener, which is found in the pulp of the moon seed crop Dioscoreophyllum cumminsii. It consists of two peptide chains with 45 and 50 amino acids, which are not covalently linked and only taste sweet together; by the sweet taste is unstable. Monellin is about 1500-2500 times as sweet as sucrose (table sugar ).
