Mustamakkara

Mustamakkara ( black sausage ) is a Finnish blood sausage. It is a typical specialty of Tampere, where it is sold fresh at the port or market from food carts. Traditionally it is eaten hot with cranberry and cold milk.

Mustamakkara consists among other things of pork, pig's blood, rye groats, rye flour and onions, which are filled into a natural casing. The three best-known manufacturers are Tapola, Savupojat and Teivon Liha.

When buying from Mustamakkara an old custom is cherished in the Tampere region: instead of quantity, the existing sum of money is given, after which the seller cuts a piece.
