Mutabbel

Mutabbal (Arabic متبل, DMG mutabbal ) is an eggplant puree, which is part of the traditional mezze and making it one of the Arab cuisine.

For the manufacture of mutabbal there are different variants. However, typically in addition to the use of garlic eggplant, tahini, yogurt, and lemon juice. The aubergines are soft cooked for the production of the Court in an oven. In many traditional households of the Levant but they are also grilled over a charcoal fire until the meat is cooked. In this way the mutabbal has a rauchigeren taste.

Traditionally mutabbal is served on a flat plate and pressed a shallow hollow in the puree. It is then drizzled with olive oil and sprinkled with parsley.
