Nisin

Nisin is a peptide antibiotic which acts from the group of lantibiotics ( lanthionine-containing antibiotics). It has a broad spectrum of activity against gram-positive bacteria. Nisin is produced by the lactic acid bacterium Lactococcus lactis. It is found in raw milk and applies to healthy people as harmless, since it is assumed that it is broken down by digestive enzymes in a short time.

For its antibiotic effect (only against Gram-positive bacteria) nisin is suitable for use. It is approved in most European countries as a preservative for various foods ( pudding, cheese, processed cheese ). As a food additive, it has the E number 234

Nisin is also used in human medicine and veterinary medicine as an antibiotic.

Nisin Nisin belongs to the family of pore-forming toxins. It uses lipid II in the bacterial cell membrane to open a pore of a diameter of 2 to 2.5 nanometers for several seconds. It is a class I lantibiotic.
