Orgeat syrup

Orgeat [ ɔrʒɑ ː ] (or [ ɔrʒɑ ː t]) is a syrup with almond flavor, which is often flavored with orange blossom water or rose water. He finds especially at the bar for making cocktails using, for example, in the Mai Tai. The syrup will taste in the direction of marzipan and is milky.

Originally orgeat was prepared from a mixture of barley and almonds, with almonds - unlike almond milk - not necessarily need to be included. The name derives from the Latin rather from where hordeata " made from barley " means; Barley is called in French orge. The Spanish word horchata has the same roots, but otherwise has little in common with the drink Orgeatsirup used at the bar. The Italian orzata syrup is prepared from benzoin.

In Malta there are ruġġata of almonds and vanilla essence, which can include cinnamon and cloves beyond. A similar drink is known to the Greek islands of Chios and Nisyros under the name Soumada and Kefalonia as orzata. In Tunisia, a sweetened almond drink is called rozata and is offered in different flavors.
