Pancetta

Pancetta is an Italian variant of pancetta pork. It is regionally differently flavored with herbs such as rosemary and sage, salted and air-dried, sometimes slightly smoked.

The fatter pieces are processed as whole and used mainly as a cooking ingredient (eg for spaghetti alla carbonara ). Less greasy pieces are rolled up and stuffed into casings. This pancetta is arrotolata also served as cold cuts.

Through its manufacturing method pancetta is particularly mild, aromatic and tender.
