Panela

Panela ( dulce also under the names Raspadura, rapadura, atado, chancaca empanizao, papelón, piloncillo or panocha known) is a Latin American food, which is obtained by boiling the sugar cane juice at high temperatures. The resulting viscous molasses is poured into rectangular molds and dried. Panela consists, inter alia, of sucrose and fructose, and includes calcium, iron, phosphorus, and ascorbic acid.

In India and Pakistan there is a similar food, the Gur or Jaggery is called.
