Papadum

A Papadam, Papadum, papad or Papar ( devanagari: पापड, papad ) is a very thin fried pancake made of lentil flour. Papadams are very crunchy and are offered in Indian and Sinhalese cuisine as an accompaniment to curries or as a snack.

The dough is made from lentil flour or a mixture of lentil flour and rice flour. There are also variations made with chickpea flour. Pepper, chili, cumin, garlic or other spices and herbs give Papadams savory spice.

The traditional preparation is two-sided frying the thin pancakes in hot oil. Here, the patties goes on evenly. The cakes cool on a rack or paper towel. In order to reduce their high fat content, it is also possible to keep the poppadoms with a pair of pliers in a hot tandoori oven, grill it on a grate or thinly to brush with oil and heat briefly in the microwave. These methods of preparation, however, the dough rises not as uniform. Since Papadams easily absorb moisture, they should be fresh, more than one hour before eating, be prepared.
