Pectinase

Pectinases are enzymes, pectic acid and the other Galakturonane columns; they build, for example, from the Pektinmittellamellen the plant cell wall - this is a normal process during fruit ripening in flowering plants. In addition, the enzyme of bacteria and fungi is formed which parasitize on plants. Pectinases are used commercially, for instance to isolate plant protoplasts.

Pectinases are used in the manufacture of fruit juices in order to increase the yield of juice. In addition, they are also used to gain color extracts and food coloring from plant materials, or highly concentrated citrus flavors from the peel of citrus fruits. Also in the winemaking process, particularly in a maceration, pectinases are used. The increase in juice yield results here mainly to an improvement of the alcoholic fermentation.

Pectinases are often produced by genetically modified microorganisms ( by fermentation fungal cultures ).
