Pseudocereal
Pseudo cereals ( also: Pseudocereals ) grains are fruits of plants species, not to the family of grasses ( Poaceae = all real cereal species ) belong. The fruits are usually very rich in starch, protein, minerals and fat. Although they have no self- baking ability, such as wheat or rye, but are otherwise similar as used cereals.
The most commonly used pseudo cereals are:
- Buckwheat ( Fagopyrum esculentum) - Buckwheat Family
- Amaranth ( Amaranthus ) - Amaranthaceae
- Kiwicha
- Panicles foxtail ( Amaranthus cruentus )
- Amaranthus hypochondriacus
- Quinoa ( Chenopodium quinoa) - Amaranthaceae
- Lambsquarters ( Chenopodium album ) - Amaranthaceae, also occurring in Eurasia
Insignificant or legally controversial pseudo cereals are:
- Tiger Lotus (Nymphaea lotus ) - Nymphaeaceae
- Hemp (Cannabis sativa) - hemp plants
All pseudo cereals are gluten-free and therefore suitable as a diet food in celiac disease.
