Queijo do Pico

Pico is a Portuguese soft cheese, and comes from the Azores island of Pico, on which the highest with 2351 m mountain in the Azores, Ponta do Pico rises.

The Pico has a soft texture and a light yellow color. The round cheese wheel has a weight 650-800 grams and has a diameter of 18 centimeters and a height of three centimeters edges. The Pico is made from the raw milk of cows. After the milk has curdled, the whey is allowed to drain slowly. After salting, the cheese is aged at least 15 days.
