Rice noodles

Rice noodles are a noodle -like and spaghetti -thin foods of different width, which is made from rice flour. Some varieties will also tapioca flour or cornstarch added to increase transparency and improve the appearance and consistency. The rice noodle is one of the most used ingredients in East Asia.

Preparation

To eat mostly the one to two millimeters thin rice noodles are used, which require only a very short cooking time of one to two minutes; they can also be with boiling water and let swell for a few minutes. After draining, it may be further processed. In contrast to the glass noodles keep after cooking their whitish color.

Typical variants countries and courts

  • In Thailand you eat rice noodles in noodle soup or fried as Phat Thai.
  • In Vietnam, there are the rice noodles in various ways.
  • Bun, similar to the European spaghetti in shape, such as the Pho served as a soup or as an accompaniment to other dishes.
  • In Indonesia Mihun called - often in Dutch spelling Mihoen (Indonesia was until 1949 Dutch colony ). Mihoen Goreng is the variation with rice noodles a popular court, which is presented as Bami Goreng with noodles and as nasi goreng with rice.
