Rice cakes

The Belgian rice cakes is a culinary specialty from the region of Verviers in Belgium, which is also very popular in the German border region, primarily in the Aachen region, and in the Dutch province of Limburg. It is a yeast dough with a filling of rice pudding that is baked in a patty form.

The day before you cook rice, milk and sugar a solid porridge. The next day you prepare for this porridge, eggs and spices a filling. This one is on a high-fat sugarless dough. After baking, allowed to cool down the cake and served it neat or with fruit or with compote.

For decades, most nutritious rice cakes small for standard daily supply of the cyclists in the Tour de France.

Pear cakes or patties Black ( also in the Rhineland gab Flaam or spit dough) is a culinary specialty from the western Rhineland and the Meuse, the Hunsrück mountains and from the Appenzell region in Switzerland. It is a yeast dough base which is a muscle of dried pears or apples, which are boiled with water if required, sweetened and flavored, filled and then baked.

In Eschweiler ( Germany ) and in the area around Eupen and Limbourg in Belgium is, or was this flatbread traditional funeral cake.

Apricot cakes

The apricot cakes is a culinary specialty of the eastern Belgium and the German border, most notably in the Eifel - Ardennes. It is a yeast dough with a filling of cooked apricots, is baked in a patty form.

As a variant, located on top of a grid of Teigriemchen and pearl sugar.

More fresh fruit cakes

Instead of apricots and cherries, apple compote or rhubarb can be used. In cherry cakes there as a topping variant sprinkles. In addition, in the East Cantons exists also the variant with plum compote and Teigriemchen.

A special variant is the widespread mainly in the Cologne area strappy apple with an apple sauce filling and a grid of Teigriemchen with pearl sugar. These cakes are now often with apricot, cherry or rice pudding filling.

Other names and history

In the south of Hesse was formerly cheesecake as cakes ( Rhine Franconian: Flååre ) refers. In St. Gallen dialect is the flatbread, whether sweet or salty, a tart. In the Netherlands and in Belgium, this kind of cakes are usually referred to as " flan " ( literally translated: flatbread ) advertised.
