Rocamadour cheese

The Rocamadour, also called Cabecou, is a French cheese made from goat's milk. His name is protected by the Appellation d' Origine since 1996. This is on the one hand the quality of the product safely and also specifies the conditions of manufacture.

The cheese offered in the trade have a diameter of four to five inches high and are only one to 1.5 centimeters. The fat content in the dry matter is 45%.

The Rocamadour is also the starting product of Picandou, a finishing shape, wrapped in the mature cheese in leaves.
