Russian Mennonite zwieback

The Tweebak is a plump and golden brown baked double-decker yeast rolls. This small double roll is the most famous pastry at the Mennonite Plautdietsch Russia and has been in this community a identity value. In German the Tweebak are often referred to as a Mennonite zwieback. However, the German rusk differs greatly in taste and appearance from Plautdietsch Tweebak.

The russlandmennonitische Tweebak probably originates from the Dutch port cities or out of the city of Gdansk, where dried and toasted biscuits were as ships' food supplies in use. The Mennonite immigrants maintained this baking tradition for the course of their further migration history.

Spelling and pronunciation

Often, instead of " Tweebak " is also written " Tweeback " - in allusion to the German language. "A" is in the Plautdietsch pronunciation but long and stretched so that the former example is preferred, as for example in various articles of the journal Plautdietsch FRIND is the case.
