Saganaki

Saganaki (Greek σαγανάκι, saɣanaci, small pans ', diminutive of Sagani or Sachani ( σαγάνι or σαχάνι ) of Turkish Sahan ) is an appetizer of Greek cuisine that is prepared according to the region from different cheeses. The court has its name from a well -called pan with two handles.

Depending on the region and availability Saganaki is made from different types of cheese. The finger-thick slice of cheese is about mehliert and fried ( Kefalo, Kasseri ) or breaded and deep fried cooked (Feta ), on Lesbos also ladotyri used. Occasionally, floured and fried variant is also flambéed with ouzo. The dish is served either in the Saganaki or on a plate with a piece of lemon.

The preparations with marine animals such as shrimp baked Garides Saganaki ( Γαρίδες σαγανάκι ) or baked clams Mydia Saganaki ( Μύδια σαγανάκι ) are cooked with tomatoes in the oven.
