Sage Derby

Sage Derby is a cheddar -type cheese, at the sage leaves for flavoring and coloring are added in manufacturing. He gets by a green marbling. This cheese is aged about twelve weeks and is mild like cheddar.

Sage Derby is one of the oldest cheeses of Britain and one of the few cheeses, where the addition, here the sage, while the production is added and not at a later stage.

The custom, sage add the cheese, dates from the 17th century, when it was found that the sage is good for health.

Sage Derby was originally eaten at harvest time and at Christmas. As colorful cheese he makes good on a cheese plate or he is also the British " plow mans meal" served because he is supposed to be good for digestion.
