Salers (cattle)

The Salers cattle are an old French cattle breed from the Massif Central.

The Salers Cattle is a very original breed of cattle that is earlier used primarily as a dairy breed in modern times as a meat breed. In the near Salers 7000 years old cave paintings were found, similar to today's Salers cattle strong. Salers cattle have a certain resemblance to ancient Egyptian red cattle.

In the present form the Salers Cattle in the 19th century was bred by a native of Salers Ernest Tyssandier d' Escous from the indigenous cattle breed shows. Today's Salers cows calve about once a year and give 6.9 to 8.9 liters of milk. She has a protein content of 3.4% and a fat content of 3.8%.

From the milk of Salers Salers steak with the cheese is made, a type of cheese that is supposed to have a 2000 year old tradition and is protected by the Appellation d' Origine. 1991, set forth the Salerskäse 92 farms per farm and kept between 35 and 50 cattle of this breed.
