Salo (food)

Salo ( Russian and Ukrainian: сало ) is a salt and spices matured for six to ten centimeters thick back bacon the kitchen of Eastern Europe. It is similar to Italian lardo.

To prepare the bacon is seasoned with salt, pepper, garlic or pepper and is ripened in a wooden box up to one year. Then it is cut into manageable pieces for sale.

You eat Salo in very fine sliced ​​brown bread and pepper or garlic for vodka ( horilka in Ukraine). It is also used fried or boiled and left out to cook with the fat in various dishes.

Salo is traditionally kept on a meat hook light and heat protected in a pantry. Thus, the specialty is kept for several years.
