Schwenker

Schwenkbraten ( Saarland: Schwenkbròòde ), swing or swivel roast is called a meat dish which is usually prepared from pork. It involves marinated and "tilted " (grilled ) slices of pork. The roast is usually cooked on a grill pan, in which the tilt and pan grill on a chain hanging over the fire.

A pan roast is usually one to three inches thick, about once to twice palm size and weighs about 100 to 300 grams. Schwenkbraten be purchased usually marinated ready, but can of course be also prepared itself; to a marinade of cooking oil, onions, garlic and spices such as pepper, oregano, thyme, pepper, bay leaves and mustard is produced in the meat portions, remains for a day. Shortly before consumption is the Schwenkbraten " pivoted " ( grilled).

Often the Schwenkbraten is quenched on the grill with a shot of beer.

Importance in the Saarland

In particular, in the Saarland and the Hunsrück, the custom of swinging widely spread and there is the dominant form of grilling.
